Garofolato – Classic

Garofolato is a traditional Italian meat dish with roots that reach deep into the heart of Roman culinary culture. Named after ‘garofano,’ the Italian term for cloves, this dish is celebrated for its rich and aromatic flavor profile. Ingredients

  • Beef Chuck Roast – 2 lbs / 900 g
  • Olive Oil – 2 tbsp / 30 ml
  • Garlic Cloves – 3 cloves, minced
  • Onion – 1 large, finely chopped
  • Carrots – 2 large, diced
  • Celery Stalks – 2, diced
  • Tomato Paste – 3 tbsp / 45 g
  • Red Wine – 1 cup / 240 ml
  • Beef Broth – 2 cups / 480 ml
  • Cloves – 5 whole
  • Bay Leaves – 2
  • Salt – to taste
  • Black Pepper – to taste
  • Parsley – for garnish, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Sear the beef until browned on all sides. Remove and set aside.
  2. In the same pot, add garlic, onion, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Stir in tomato paste and cook for another 2 minutes.
  4. Deglaze the pot with red wine, scraping up any browned bits. Allow the wine to reduce by half.
  5. Return the beef to the pot, add beef broth, cloves, bay leaves, salt, and pepper.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, or until the beef is tender.
  7. Remove from heat, discard cloves and bay leaves, and let the beef rest before slicing.
  8. Serve garnished with parsley.
