Ingredients
- garlic cloves – 1 cup / 150 g
- lemon juice – 1/2 cup / 120 ml
- salt – 1 1/2 teaspoons
- vegetable oil – 3 cups / 720 ml
- cold water – 1/4 cup / 60 ml
Instructions
- Peel the garlic cloves and place them in a food processor with the salt. Pulse until finely chopped.
- Add half of the lemon juice and pulse further until the garlic becomes a smooth paste.
- With the food processor running on low speed, slowly drizzle in the vegetable oil in a thin, steady stream. The mixture should start to emulsify and thicken.
- Alternate adding the remaining lemon juice and oil slowly, ensuring the emulsion is sustained.
- If the sauce becomes too thick, add cold water gradually while blending until desired consistency is achieved.
- Taste and adjust salt and lemon juice as needed.
