Ingredients

  • garlic cloves – 20 cloves / 50 g
  • dried red chilies – 6 pieces
  • tamarind pulp – 2 tablespoons / 30 g
  • salt – 1 teaspoon / 5 g
  • oil – 2 tablespoons / 30 ml
  • coriander seeds – 1 teaspoon / 5 g

Instructions

  1. Peel the garlic and set aside.
  2. Heat the oil in a pan over medium heat.
  3. Add the dried red chilies and coriander seeds and sauté until aromatic.
  4. Add the garlic cloves and cook until they start turning golden brown.
  5. Remove from heat and let it cool.
  6. In a blender, combine the sautéed mixture with tamarind pulp and salt.
  7. Blend to a smooth paste, adding a little water if necessary.
  8. Adjust seasoning and serve with your favorite dish or store in an airtight container.
