Ingredients
- okra – 1 lb / 450 g
- spinach – 2 cups chopped / 60 g
- smoked fish – 8 oz / 225 g
- palm oil – 1/4 cup / 60 ml
- onion – 1 medium, chopped
- garlic – 3 cloves, minced
- tomato paste – 2 tbsp / 30 g
- hot pepper – 1, chopped
- salt – 1 tsp / 5 g
- water – 3 cups / 720 ml
Instructions
- Heat the palm oil in a large pot over medium heat.
- Add the chopped onions and garlic. Cook until translucent, about 5 minutes.
- Stir in the tomato paste and hot pepper, cooking for another 3 minutes.
- Add the okra and cook for 5 minutes until they start to soften.
- Pour in the water and bring to a boil.
- Add the smoked fish and chopped spinach, reduce heat to low, and simmer for 30 minutes.
- Season with salt and serve warm.
