Ingredients

  • beef shank – 2 lbs / 900 g
  • pork shoulder – 1 lb / 450 g
  • dried pinto beans – 1 cup / 200 g
  • canned hominy – 2 cups / 300 g
  • onion – 1 medium, chopped
  • garlic cloves – 4 cloves, minced
  • bay leaves – 2 leaves
  • dried oregano – 2 tsp
  • salt – to taste
  • black pepper – to taste
  • water – 10 cups / 2.4 liters
  • cilantro – 1/4 cup, chopped for garnish

Instructions

  1. Rinse and soak the pinto beans overnight.
  2. In a large pot, combine beef shank, pork shoulder, soaked beans, onion, garlic, bay leaves, oregano, salt, and pepper with water.
  3. Bring to a boil, then reduce heat to a gentle simmer and cook for about 2 hours until the meat and beans are tender.
  4. Add the canned hominy and let simmer for an additional 30 minutes.
  5. Remove bay leaves, adjust seasoning if necessary, and garnish with chopped cilantro before serving.
