Ingredients
- chicken, cut into pieces – 1.5 kg / 3.3 lbs
- salt – 1 1/2 teaspoons
- black pepper – 1 teaspoon
- olive oil – 3 tablespoons
- onion, diced – 1 large
- bell pepper, diced – 1 large
- tomato, chopped – 2 large
- garlic, minced – 4 cloves
- paprika – 1 teaspoon
- cumin – 1 teaspoon
- rice – 2 cups / 400 g
- chicken broth – 4 cups / 960 ml
- bay leaf – 1 leaf
- fresh parsley, chopped – 1/4 cup
- fresh cilantro, chopped – 1/4 cup
Instructions
- Season the chicken pieces with salt and black pepper.
- In a large pot, heat olive oil over medium-high heat. Brown the chicken pieces on all sides.
- Remove the chicken and set aside. In the same pot, add onion, bell pepper, tomato, and garlic, and sauté until translucent.
- Stir in paprika and cumin, cooking for an additional minute.
- Add rice to the pot and stir well to coat with the vegetable mixture.
- Return the chicken to the pot and pour in the chicken broth. Add the bay leaf.
- Bring to a boil, then reduce heat to low. Cover and simmer until the rice is cooked and the chicken is tender, about 25-30 minutes.
- Stir in fresh parsley and cilantro before serving.
