Galinhada is a traditional Brazilian stew hailing from the warmth of Goiás and Minas Gerais. This dish is a soulful blend of flavors, embodying the rich culinary traditions of Brazil. Traditionally, galinhada combines chicken, rice, and a melody of spices to create a dish that is as comforting as it is flavorful. Originally, it was made by peasants using simple, accessible ingredients, turning humble poultry into a celebratory feast often enjoyed during gatherings and festivals.

Ingredients

  • chicken, cut into pieces – 1.5 kg / 3.3 lbs
  • salt – 1 1/2 teaspoons
  • black pepper – 1 teaspoon
  • olive oil – 3 tablespoons
  • onion, diced – 1 large
  • bell pepper, diced – 1 large
  • tomato, chopped – 2 large
  • garlic, minced – 4 cloves
  • paprika – 1 teaspoon
  • cumin – 1 teaspoon
  • rice – 2 cups / 400 g
  • chicken broth – 4 cups / 960 ml
  • bay leaf – 1 leaf
  • fresh parsley, chopped – 1/4 cup
  • fresh cilantro, chopped – 1/4 cup

Instructions

  1. Season the chicken pieces with salt and black pepper.
  2. In a large pot, heat olive oil over medium-high heat. Brown the chicken pieces on all sides.
  3. Remove the chicken and set aside. In the same pot, add onion, bell pepper, tomato, and garlic, and sauté until translucent.
  4. Stir in paprika and cumin, cooking for an additional minute.
  5. Add rice to the pot and stir well to coat with the vegetable mixture.
  6. Return the chicken to the pot and pour in the chicken broth. Add the bay leaf.
  7. Bring to a boil, then reduce heat to low. Cover and simmer until the rice is cooked and the chicken is tender, about 25-30 minutes.
  8. Stir in fresh parsley and cilantro before serving.
