Galbi – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Galbi, a celebrated Korean barbecue dish, features succulent beef short ribs glazed in a savory-sweet marinade. Its origins trace back to South Korea, where it’s traditionally enjoyed as part of communal meals, often accompanied by a variety of banchan (side dishes) and served over a charcoal grill. This dish is a symphony of flavors, with the perfect balance of savory soy, sweet sugar, and aromatic garlic and ginger, creating a tantalizing taste experience.

Ingredients

  • Beef short ribs – 2 lbs / 900 g
  • Soy sauce – 1/2 cup / 120 ml
  • Brown sugar – 1/4 cup / 55 g
  • Garlic, minced – 4 cloves
  • Ginger, grated – 1 tablespoon / 15 g
  • Sesame oil – 2 tablespoons / 30 ml
  • Scallions, chopped – 2
  • Pear, grated – 1/2 cup / 120 g
  • Black pepper – 1 teaspoon / 2 g
  • Toasted sesame seeds – 1 tablespoon / 10 g

Instructions

  1. Prepare the beef short ribs by scoring the surface with a sharp knife to allow better absorption of the marinade.
  2. In a large bowl, combine soy sauce, brown sugar, garlic, ginger, sesame oil, scallions, grated pear, and black pepper to create the marinade.
  3. Add the short ribs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 4 hours, or preferably overnight, to maximize flavor.
  4. Preheat a grill to medium-high heat. Grill the marinated short ribs for about 5 minutes on each side, or until caramelized and cooked through.
  5. Sprinkle with toasted sesame seeds before serving and enjoy hot with rice and Korean side dishes.

Substitutions

  • Brown sugar -> Honey or white sugar
  • Pear -> Apple or kiwi for tenderizing
  • Beef short ribs -> Pork ribs for a variation

Enhancements in the Next Evolution

  • Increase marination time for deeper flavor penetration.
  • Experiment with adding a splash of rice wine for complexity.
