This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Galbi, a celebrated Korean barbecue dish, features succulent beef short ribs glazed in a savory-sweet marinade. Its origins trace back to South Korea, where it’s traditionally enjoyed as part of communal meals, often accompanied by a variety of banchan (side dishes) and served over a charcoal grill. This dish is a symphony of flavors, with the perfect balance of savory soy, sweet sugar, and aromatic garlic and ginger, creating a tantalizing taste experience.
Ingredients
- Beef short ribs – 2 lbs / 900 g
- Soy sauce – 1/2 cup / 120 ml
- Brown sugar – 1/4 cup / 55 g
- Garlic, minced – 4 cloves
- Ginger, grated – 1 tablespoon / 15 g
- Sesame oil – 2 tablespoons / 30 ml
- Scallions, chopped – 2
- Pear, grated – 1/2 cup / 120 g
- Black pepper – 1 teaspoon / 2 g
- Toasted sesame seeds – 1 tablespoon / 10 g
Instructions
- Prepare the beef short ribs by scoring the surface with a sharp knife to allow better absorption of the marinade.
- In a large bowl, combine soy sauce, brown sugar, garlic, ginger, sesame oil, scallions, grated pear, and black pepper to create the marinade.
- Add the short ribs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 4 hours, or preferably overnight, to maximize flavor.

- Sprinkle with toasted sesame seeds before serving and enjoy hot with rice and Korean side dishes.
Substitutions
