Gado-Gado is a vibrant Indonesian salad known for its rich array of colorful vegetables, boiled egg, and tofu, all bathed in a luscious peanut sauce. The dish hails from Java, where it is a staple street food, offering a taste of Indonesia’s rich culinary traditions. Its name translates to ‘mix-mix’, a nod to the myriad of ingredients combined to create a harmonious blend of textures and flavors.
Ingredients
- Cabbage – 2 cups / 140 g, sliced
- Bean sprouts – 1 cup / 100 g
- Green beans – 1 cup / 125 g, cut into 2-inch pieces
- Potatoes – 2 medium / 300 g, boiled
- Firm tofu – 200 g, fried until golden
- Hard-boiled eggs – 4, peeled and halved
- Cucumber – 1, sliced
- Peanut butter – 1/2 cup / 120 g
- Coconut milk – 1/2 cup / 120 ml
- Tamarind paste – 1 tbsp / 15 g
- Soy sauce – 2 tbsp / 30 ml
- Lime juice – 1 tbsp / 15 ml
- Garlic – 2 cloves, minced
- Red chili – 1, chopped
- Salt – to taste
- Water – 1/4 cup / 60 ml
Instructions
- Blanch cabbage, bean sprouts, and green beans in boiling water for about 2 minutes, then drain.
- Slice the boiled potatoes into wedges and set aside.
- To make the peanut sauce: in a saucepan, combine peanut butter, coconut milk, tamarind paste, soy sauce, lime juice, garlic, red chili, salt, and water. Cook over low heat, stirring until smooth and slightly thickened.
- Arrange all vegetables, potatoes, tofu, and cucumber on a large serving platter. Top with halved eggs.
- Drizzle with peanut sauce before serving. Serve immediately.
Substitutions
- Peanut butter -> Crushed roasted peanuts
- Coconut milk -> Regular milk
- Firm tofu -> Tempeh
