Ingredients
- Sweet potatoes – 4 large / 1 kg
- Unsalted peanuts – 1 cup / 150 g
- Water – 2 cups / 480 ml
- Salt – 1 teaspoon / 5 g
Instructions
- Peel and cut the sweet potatoes into large chunks.
- In a pot, combine the peanuts and water, and bring to a boil.
- Add the sweet potatoes and salt, then cover and simmer for about 40 minutes, or until the sweet potatoes are tender.
- Stir occasionally to prevent sticking, and ensure the mixture does not dry out (add more water if needed).
- Once the sweet potatoes are cooked and the sauce is thick, serve warm.
