Ful Medames is a traditional Saudi Arabian stew that has earned its place as a cherished culinary staple across the Middle East. This hearty and nutritious dish features fava beans simmered slowly to bring out their creamy texture, complemented by aromatic spices, fresh herbs, and a hint of citrus. Ingredients

  • dried fava beans – 2 cups / 320 g
  • olive oil – 1/4 cup / 60 ml
  • garlic cloves, minced – 4 cloves
  • cumin powder – 1 teaspoon
  • lemon juice – 2 tablespoons
  • salt – 1 teaspoon
  • black pepper – 1/2 teaspoon
  • fresh parsley, chopped – 1/4 cup / 15 g
  • chopped tomatoes – 1/2 cup / 80 g
  • onions, chopped – 1/2 cup / 80 g
  • Tahini – 2 tablespoons

Instructions

  1. Soak the fava beans in cold water overnight. Drain them and rinse well.
  2. In a large pot, add the fava beans and enough water to cover them. Boil the beans until they are tender, about 1 to 1.5 hours.
  3. In a separate pan, heat olive oil over medium heat. Add the minced garlic and saute until golden brown.
  4. Add the cumin powder and stir for a few seconds. Add this mixture to the cooked fava beans.
  5. Add lemon juice, salt, and black pepper to the beans. Stir well to combine all ingredients.
  6. Transfer the mixture to a serving bowl. Top with chopped tomatoes, onions, fresh parsley, and a drizzle of tahini.
  7. Serve warm with flatbread on the side.
