Ingredients

  • dried cod – 500 g / 1.1 lbs
  • all-purpose flour – 200 g / 1.5 cups
  • water – 250 ml / 1 cup
  • fresh parsley – 30 g / 1/4 cup, chopped
  • garlic – 2 cloves, minced
  • olive oil – for deep frying
  • salt – to taste
  • black pepper – to taste
  • lemon wedges – for serving

Instructions

  1. Soak the dried cod in fresh water for 24-48 hours, changing the water every 6-8 hours to remove excess salt.
  2. After soaking, drain and pat dry the fish. Flake into small pieces, removing any bones.
  3. In a large bowl, mix the flour with enough water to create a smooth batter. Stir in the parsley, garlic, salt, and pepper.
  4. Add the flaked cod to the batter, stirring gently to coat each piece.
  5. In a deep pan, heat olive oil to 180°C / 350°F.
  6. Drop spoonfuls of the batter into the hot oil, frying in batches to avoid overcrowding. Fry until golden and crisp, approximately 4-5 minutes per side.
  7. Remove fritters with a slotted spoon and drain on paper towels.
  8. Serve hot with lemon wedges.
