Ingredients

  • beef steaks – 500 g / 1 lb
  • onion – 1 large, finely chopped
  • tomato – 1 large, grated
  • moixernons (St. George’s mushrooms) – 50 g / 1.7 oz dried
  • all-purpose flour – for dusting
  • olive oil – 4 tbsp
  • beef broth – 500 ml / 2 cups
  • white wine – 125 ml / 0.5 cup
  • garlic – 3 cloves, minced
  • bay leaf – 1
  • parsley – 1 tbsp, chopped
  • salt and pepper – to taste

Instructions

  1. Rehydrate the dried moixernons in warm water for 30 minutes, then drain and set aside.
  2. Lightly coat the beef steaks with flour, shaking off any excess.
  3. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the beef and sear until browned on both sides. Remove from the pot and set aside.
  4. In the same pot, add the remaining olive oil and sauté the onion until translucent. Add the garlic and cook for another minute.
  5. Stir in the grated tomato and cook until the mixture thickens, about 5 minutes.
  6. Add the white wine, allow to simmer for 2 minutes, then return the beef to the pot.
  7. Pour in the beef broth, add the bay leaf and moixernons, and season with salt and pepper.
  8. Cover the pot and simmer gently for about 1.5 hours, or until the beef is tender. Stir occasionally and add water if necessary.
  9. Garnish with chopped parsley before serving.
