Ingredients

  • Fregola pasta – 300 g / 10.5 oz
  • Fresh clams (arselle) – 1 kg / 2.2 lbs
  • Olive oil – 3 tbsp
  • Garlic cloves, minced – 2 cloves
  • Dry white wine – 150 ml / 5 fl oz
  • Fresh parsley, chopped – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste
  • Red pepper flakes (optional) – 1/2 tsp

Instructions

  1. Rinse the clams under cold water and scrub their shells. Discard any that remain open after gently tapping them.
  2. In a large pot, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Pour in the white wine and bring to a simmer. Add the clams, cover, and cook until they open, about 5 minutes. Discard any that do not open.
  4. Remove clams with a slotted spoon, set aside, and reduce the liquid by half.
  5. Add fregola to the pot and stir to coat with the oil and reduced clam liquor.
  6. Add enough water to cover the fregola by about 1 inch. Cook, stirring occasionally, until fregola is tender, about 15 minutes.
  7. Return clams to the pot along with their juices. Season with salt, black pepper, and red pepper flakes if using. Heat through.
  8. Garnish with fresh parsley before serving.
