- Fresh borage – 50 g / 1.75 oz
- Fresh cress – 50 g / 1.75 oz
- Fresh chervil – 50 g / 1.75 oz
- Fresh salad burnet – 50 g / 1.75 oz
- Sour cream – 200 g / 7 oz
- Quark (or Greek yogurt) – 200 g / 7 oz
- Hard-boiled eggs – 2
- White wine vinegar – 2 tbsp / 30 ml
- Salt – to taste
- Pepper – to taste
Instructions
- Wash all herbs thoroughly and pat dry. Roughly chop them and place in a large mixing bowl.
- Peel the hard-boiled eggs and chop them finely.
- Add sour cream, quark, and chopped eggs to the bowl with the herbs.
- Mix in the white wine vinegar and stir everything until well combined.
- Season with salt and pepper to taste.
- Let the sauce sit for at least 30 minutes in the refrigerator to allow flavors to meld.
- Serve chilled alongside boiled potatoes and additional hard-boiled eggs, if desired.
