Francesinha – Classic

The Francesinha is a decadent and hearty Portuguese sandwich originating in Porto, a city renowned for its unique culinary traditions. This dish is a symbol of comfort food, layered with cured meats, sausage, and steak, enveloped in melted cheese, and doused in a spicy, rich tomato-based beer sauce. Often served with French fries, the Francesinha has become an emblem of the hearty and robust flavors of Northern Portugal.

Ingredients

  • Thick bread slices – 8 slices
  • Cooked ham – 8 slices
  • Linguiça sausage – 2, sliced
  • Roast beef – 4 slices
  • Cheddar cheese slices – 16 slices
  • Tomato paste – 2 tablespoons
  • Beer – 1 cup / 240 ml
  • Port wine – 1/4 cup / 60 ml
  • Brandy – 2 tablespoons
  • Beef stock – 1 cup / 240 ml
  • Onion – 1, finely chopped
  • Garlic cloves – 2, minced
  • Olive oil – 2 tablespoons
  • Bay leaf – 1
  • Piri piri sauce – 1 tablespoon
  • All-purpose flour – 2 tablespoons

Instructions

  1. In a large saucepan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add tomato paste, beer, port wine, brandy, and beef stock. Stir well to combine.
  3. Add bay leaf and piri piri sauce. Simmer for 20 minutes to blend flavors.
  4. Remove bay leaf and using a blender, pureé the sauce until smooth.
  5. Return to heat; whisk in flour to thicken. Adjust seasoning if necessary.
  6. To assemble each Francesinha, layer bread, ham, sausage, beef, and cheese in stacks.
  7. Place assembled sandwiches on a baking sheet. Pour sauce over each stack and bake at 180°C (350°F) until cheese melts.
  8. Serve with French fries.
