Ingredients

  • baby octopus – 1 kg / 2.2 lbs
  • olive oil – 4 tbsp / 60 ml
  • garlic, minced – 3 cloves
  • onion, finely diced – 1 medium / 150 g
  • canned tomatoes – 400 g / 14 oz
  • dry white wine – 120 ml / 1/2 cup
  • parsley, chopped – 2 tbsp / 8 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. First, clean the baby octopus, removing the beaks and eyes. Rinse thoroughly under cold running water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until translucent and lightly golden.
  3. Add the cleaned baby octopus to the skillet, stirring occasionally for about 3-4 minutes, until they start to firm slightly.
  4. Pour in the white wine and allow it to simmer for about 2 minutes, enabling the alcohol to evaporate.
  5. Stir in the canned tomatoes, breaking them apart with a spoon. Let the mixture come to a gentle simmer.
  6. Season with salt and pepper to taste. Cover the skillet and reduce the heat to low. Let it simmer gently for 30-40 minutes, until the octopus is tender.
  7. Remove from heat and sprinkle with chopped parsley before serving.
