Focaccia, a renowned bread originating from Italy, epitomizes the rustic charm and flavorful potency of Italian cuisine. Traditionally linked to the Ligurian region, this airy, olive oil-laden bread is known for its dimpled surface, which captures the aromatic essence of extra virgin olive oil, sea salt, and often aromatic herbs like rosemary. A versatile canvas, focaccia has captured the hearts of bread lovers worldwide with its perfect balance of crunch and softness, making it an iconic staple in Italian bakeries and kitchens alike.

Ingredients

  • all-purpose flour – 4 cups / 500 g
  • warm water – 1 3/4 cups / 420 ml
  • olive oil – 1/4 cup / 60 ml
  • salt – 2 tsp / 10 g
  • active dry yeast – 2 1/4 tsp / 7 g
  • fresh rosemary – 2 tbsp / 10 g
  • sea salt flakes – 1 tbsp / 15 g

Instructions

  1. In a medium bowl, dissolve the yeast in the warm water and let it sit for 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until the dough begins to come together, then turn it out onto a floured surface and knead for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat your oven to 450°F (230°C).
  6. Punch down the dough and transfer it to a greased baking sheet. Use your fingers to spread it out to an even thickness (about 1 inch).
  7. Drizzle extra olive oil over the surface and sprinkle with rosemary and sea salt.
  8. Let it rest for 20 minutes, then bake for 20-25 minutes until golden brown.
  9. Cool slightly on a wire rack before serving.
