Ingredients

  • Salt – 1 teaspoon / 5 g
  • Black pepper – 1 teaspoon / 5 g
  • Vegetable oil – 1/2 cup / 120 ml
  • Bajan salt bread rolls – 4 rolls
  • Cabbage, shredded – 1 cup / 80 g
  • Tomato, sliced – 1 large / 150 g
  • Hot pepper sauce – 4 tablespoons / 60 ml

Instructions

  1. Rinse and pat dry the flying fish fillets. Drizzle with lemon juice and coat with Bajan seasoning. Let marinate for 20 minutes.
  2. In a shallow dish, mix all-purpose flour with salt and black pepper.
  3. Dredge the marinated fillets in the flour mixture, ensuring a thorough coating.
  4. Heat vegetable oil in a skillet over medium heat. Fry the fillets until golden brown on both sides, about 3-4 minutes per side.
  5. Remove the fillets and place on paper towels to drain excess oil.
  6. Slice open the Bajan salt bread rolls and fill with fried flying fish, shredded cabbage, and tomato slices.
  7. Drizzle with hot pepper sauce and serve immediately.
