Ingredients

  • Seal flippers – 2 whole
  • All-purpose flour – 1/2 cup / 60 g
  • Butter – 1/4 cup / 56 g
  • Onion, chopped – 1 medium / 150 g
  • Carrot, diced – 2 medium / 200 g
  • Potatoes, peeled and diced – 3 medium / 450 g
  • Thyme leaves – 1 tsp / 1 g
  • Salt – 1 tsp / 5 g
  • Pepper – 1/2 tsp / 2 g
  • Pastry dough – 1 recipe (top and bottom crust)
  • Vegetable broth – 2 cups / 480 ml

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the seal flippers well and place them in a pot with salted water. Simmer for about 2 hours until tender.
  3. Remove the flippers from the pot, let them cool, then remove the bone and cut the meat into bite-sized pieces.
  4. Melt butter in a large pan, add onions and carrots, and sauté until onions are translucent.
  5. Stir in flour to make a roux, cooking for 2-3 minutes.
  6. Gradually add vegetable broth, whisking continuously to avoid lumps. Let simmer until thickened.
  7. Add potatoes to the sauce. Stir in thyme, salt, and pepper.
  8. Place the seal meat into a pie dish, pour the sauce and vegetables over the meat.
  9. Cover with pastry dough, sealing the edges tightly. Make several small cuts on the top to allow steam to escape.
  10. Bake for 35-40 minutes until the crust is golden brown and the filling is bubbling.
  11. Let cool slightly before serving.
