Ingredients
- all-purpose flour – 3 cups / 360 g
- olive oil – 1/2 cup / 120 ml
- dry white wine – 1/2 cup / 120 ml
- water – 1/4 cup / 60 ml
- salt – 1/2 teaspoon
- ricotta cheese – 1 cup / 250 g
- grated cheese (Parmigiano-Reggiano or Manchego) – 1/2 cup / 50 g
- sugar – 1/4 cup / 50 g
- egg – 1 large
- anise seeds – 1 teaspoon
- fresh mint leaves – a handful, chopped
- lemon zest – 1 teaspoon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, olive oil, white wine, water, and salt to create a dough. Knead until smooth and elastic. Rest for 30 minutes.
- In another bowl, mix ricotta, grated cheese, sugar, egg, anise seeds, chopped mint, and lemon zest until well combined.
- Divide the dough into 12 portions. Roll each portion into a thin circle.
- Place a spoonful of the filling on one half of each dough circle, fold over to seal, and crimp the edges.
- Place on a baking sheet and bake for 20-25 minutes until golden.
- Allow to cool slightly before serving.
