  • beef tripe – 2 lb / 900 g

  • beef broth – 8 cups / 2 L
  • marjoram – 1 tsp / 2 g
  • allspice – 1/4 tsp / 1 g
  • bay leaf – 1
  • salt – to taste
  • black pepper – to taste
  • butter – 2 tbsp / 28 g
  • parsley – for garnish

Instructions

  1. Clean the tripe thoroughly by rinsing under cold water. Then blanch it in boiling water for 5 minutes. Drain and rinse again.
  2. Cut the tripe into thin strips.
  3. In a large pot, melt the butter over medium heat. Add chopped onions, carrots, and celery. Sauté until the vegetables are soft.
  4. Add garlic and cook for another minute, then add beef tripe and stir to combine.
  5. Pour in the beef broth, add the bay leaf, marjoram, and allspice. Season with salt and black pepper.
  6. Bring to a boil, lower the heat and let it simmer, covered, for about 2-3 hours until the tripe is tender.
  7. Serve hot, garnished with parsley.
