Instructions
- Clean the tripe thoroughly by rinsing under cold water. Then blanch it in boiling water for 5 minutes. Drain and rinse again.
- Cut the tripe into thin strips.
- In a large pot, melt the butter over medium heat. Add chopped onions, carrots, and celery. Sauté until the vegetables are soft.
- Add garlic and cook for another minute, then add beef tripe and stir to combine.
- Pour in the beef broth, add the bay leaf, marjoram, and allspice. Season with salt and black pepper.
- Bring to a boil, lower the heat and let it simmer, covered, for about 2-3 hours until the tripe is tender.
