Ingredients

  • vanilla extract – 1 tsp
  • salt – 1/2 tsp
  • vegetable oil – for frying
  • shredded coconut – 1/4 cup / 20 g

Instructions

  1. In a large mixing bowl, combine the flour, sugar, yeast, and salt.
  2. Add the coconut milk, warm water, and vanilla extract to the dry ingredients and mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until it is smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a long, thin twist.
  6. Heat vegetable oil in a deep pan to 350°F / 175°C.
  7. Fry the firi firi in batches, turning occasionally, until golden brown and cooked through, about 3-4 minutes per side.
  8. Remove from oil and drain on paper towels. Sprinkle with shredded coconut while warm.
