Ingredients

  • pork shoulder – 1.5 lb / 680 g
  • chorizo – 0.5 lb / 225 g
  • black beans – 2 cups / 400 g
  • bay leaves – 2 leaves
  • onion – 1 large / 150 g
  • garlic cloves – 4
  • olive oil – 2 tbsp / 30 ml
  • tomato paste – 2 tbsp / 30 g
  • smoked paprika – 1 tsp / 5 g
  • salt – to taste
  • black pepper – to taste
  • water – 4 cups / 960 ml

Instructions

  1. Soak the black beans overnight in cold water. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent.
  3. Add the pork shoulder, browning on all sides.
  4. Stir in the chorizo, tomato paste, and smoked paprika. Cook for 2-3 minutes until aromatic.
  5. Add the soaked beans, bay leaves, salt, pepper, and water. Bring to a boil.
  6. Reduce the heat to low, cover, and let simmer for about 2 hours, or until the pork and beans are tender.
  7. Serve hot, garnished with fresh herbs if desired.
