Ingredients

  • dried fava beans – 1 cup / 160 g
  • water – 6 cups / 1.4 liters
  • onion, finely chopped – 1 medium / 150 g
  • garlic cloves, minced – 3 cloves
  • olive oil – 2 tbsp
  • fresh cilantro, chopped – 1/4 cup / 15 g
  • dried oregano – 1 tsp
  • cumin powder – 1/2 tsp
  • salt – to taste
  • black pepper – to taste
  • lime, juiced – 1

Instructions

  1. Rinse and soak the dried fava beans overnight in water. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent, about 5 minutes.
  3. Add the soaked fava beans, 6 cups of water, oregano, and cumin to the pot. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 1 to 1.5 hours, or until the beans are tender.
  5. Season with salt and black pepper to taste.
  6. Stir in the fresh cilantro and lime juice just before serving.
