Ingredients
- dried white beans – 2 cups / 400 g
- olive oil – 1/4 cup / 60 ml
- medium onion, chopped – 1
- carrots, sliced – 2
- garlic, minced – 3 cloves
- tomato paste – 2 tablespoons / 30 g
- canned diced tomatoes – 1 cup / 240 g
- water – 2 cups / 480 ml
- lemon juice – 2 tablespoons / 30 ml
- sugar – 1 teaspoon / 5 g
- salt – 1 teaspoon / 5 g
- pepper – 1/2 teaspoon / 2 g
- fresh parsley, chopped – 1/4 cup / 15 g
Instructions
- Soak the dried white beans overnight in plenty of water.
- Drain and rinse the beans, then cook them in a pot of boiling water for about 1 hour or until tender.
- In a large pan, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent.
- Stir in the sliced carrots and minced garlic, cooking until the carrots begin to soften.
- Add the tomato paste and canned diced tomatoes to the pan, stirring to combine.
- Pour in the water, lemon juice, sugar, salt, and pepper. Stir everything together and bring to a gentle simmer.
- Add the cooked beans to the pan, mixing well. Cover and let it simmer on low heat for about 20 minutes, or until the sauce thickens.
- Garnish with freshly chopped parsley before serving at room temperature or chilled.
