Ingredients

  • dried white beans – 2 cups / 400 g
  • olive oil – 1/4 cup / 60 ml
  • medium onion, chopped – 1
  • carrots, sliced – 2
  • garlic, minced – 3 cloves
  • tomato paste – 2 tablespoons / 30 g
  • canned diced tomatoes – 1 cup / 240 g
  • water – 2 cups / 480 ml
  • lemon juice – 2 tablespoons / 30 ml
  • sugar – 1 teaspoon / 5 g
  • salt – 1 teaspoon / 5 g
  • pepper – 1/2 teaspoon / 2 g
  • fresh parsley, chopped – 1/4 cup / 15 g

Instructions

  1. Soak the dried white beans overnight in plenty of water.
  2. Drain and rinse the beans, then cook them in a pot of boiling water for about 1 hour or until tender.
  3. In a large pan, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent.
  4. Stir in the sliced carrots and minced garlic, cooking until the carrots begin to soften.
  5. Add the tomato paste and canned diced tomatoes to the pan, stirring to combine.
  6. Pour in the water, lemon juice, sugar, salt, and pepper. Stir everything together and bring to a gentle simmer.
  7. Add the cooked beans to the pan, mixing well. Cover and let it simmer on low heat for about 20 minutes, or until the sauce thickens.
  8. Garnish with freshly chopped parsley before serving at room temperature or chilled.
