Falsomagro – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Falsomagro, an Italian culinary masterpiece from the heart of Sicily, elevates traditional meat dishes to an art form. The name ‘Falsomagro’ intriguingly means ‘false lean’ in Italian. It reflects the element of surprise and decadence within—being a fusion of rich flavors encased in a slice of beef. Traditionally prepared for special occasions and Sundays, this dish takes center stage with its stuffed meat roulade, bursting with a harmonious blend of cheese, eggs, herbs, and other aromatic ingredients. It’s an ancient recipe that has evolved over the years, often adapting to the modern palate while retaining its rustic charm and authenticity.

  • beef flank steak – 2 lbs / 900 g
  • Italian sausage – 200 g / 7 oz

  6. Add chopped onion to the pan, cook until soft, then deglaze with red wine.
  7. Stir in tomato paste and beef broth, bringing to a simmer.
  8. Transfer the meat roll and sauce to an ovenproof dish and cover.
