Ingredients

  • dried cannellini beans – 1 cup / 200 g
  • extra-virgin olive oil – 1/4 cup / 60 ml
  • garlic cloves, minced – 4
  • fresh sage leaves – 10
  • canned whole tomatoes – 14 oz can / 400 g
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Soak the dried cannellini beans overnight in ample water. Drain and rinse before cooking.
  2. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sage leaves, stirring until the garlic is fragrant.
  3. Add the tomatoes, breaking them up with a spoon. Cook for about 10 minutes to let the flavors meld.
  4. Add the soaked beans to the pot along with enough water to cover them. Bring to a simmer.
  5. Season with salt and black pepper. Let the stew cook on low heat for 1.5 to 2 hours, or until the beans are tender and infused with the flavors of the sauce.
