Ingredients

  • Pork shoulder – 1 lb / 450 g
  • Pig liver – 0.5 lb / 225 g
  • Streaky bacon – 0.3 lb / 135 g
  • Onion – 1 medium, chopped
  • Breadcrumbs – 1 cup / 100 g
  • Fresh sage – 2 tbsp, chopped
  • Fresh thyme – 1 tbsp, chopped
  • Egg – 1 large
  • Allspice – 1 tsp
  • Salt – 1 tsp
  • Black pepper – 1/2 tsp
  • Chicken stock – 1 cup / 240 ml

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine the pork shoulder, pig liver, and streaky bacon. Pulse until coarsely ground.
  3. Transfer the ground meat to a large bowl. Add onion, breadcrumbs, sage, thyme, egg, allspice, salt, and pepper. Mix until well combined.
  4. Shape the mixture into round balls about 2 inches in diameter.
  5. Place the faggots in a baking dish and pour chicken stock over them.
  6. Cover with aluminum foil and bake in the preheated oven for about 1 hour until cooked through and tender.
  7. Serve hot with gravy and mashed potatoes.

  • Streaky bacon -> Pancetta
  • Fresh sage -> Dried sage
