Ingredients

  • red lentils – 1 cup / 200 g
  • bulgur – 1/2 cup / 90 g
  • rice – 1/4 cup / 45 g
  • butter – 2 tablespoons / 28 g
  • olive oil – 1 tablespoon / 15 ml
  • onion – 1 large, chopped
  • garlic – 3 cloves, minced
  • tomato paste – 2 tablespoons / 30 g
  • pepper paste – 1 tablespoon / 15 g
  • dried mint – 2 teaspoons / 4 g
  • red pepper flakes – 1 teaspoon / 2 g
  • hot water – 7 cups / 1.7 liters
  • salt – to taste
  • black pepper – to taste
  • lemon wedges – for serving

Instructions

  1. Rinse the red lentils, bulgur, and rice under cold water until the water runs clear.
  2. In a large pot, melt the butter with the olive oil over medium heat. Add the chopped onion and sautè until translucent.
  3. Stir in the minced garlic and cook for another minute. Add the tomato paste and pepper paste, cooking until fragrant.
  4. Add rinsed lentils, bulgur, and rice to the pot. Pour in the hot water and bring to a boil.
  5. Reduce the heat to low and let simmer for about 30 minutes, stirring occasionally, until the grains are cooked and the soup has thickened.
  6. Stir in dried mint, red pepper flakes, and season with salt and black pepper to taste.
  7. Serve hot, garnished with lemon wedges to add a fresh touch.
