  • canned cannellini beans, drained and rinsed – 1 can / 400 g
  • chicken broth – 6 cups / 1.5 liters
  • escarole, chopped – 1 head / 500 g
  • Italian sausage, sliced – 2 links / 200 g
  • Parmesan rind – 1 piece
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add minced garlic, onion, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
  3. Stir in the Italian sausage and cook until browned.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the escarole, cannellini beans, and Parmesan rind.
  6. Season with salt and black pepper to taste.
  7. Simmer gently for 20-25 minutes until escarole is tender.
  8. Remove Parmesan rind before serving.
