Çerkez Tavuğu, or Circassian Chicken, is a traditional Turkish dish with origins tracing back to the Caucasus region. Ingredients
- whole chicken – 1 (about 1.5 kg / 3.3 lbs)
- water – 3 liters / 12 cups
- salt – 1 tablespoon
- walnuts – 300 g / 2 cups
- stale bread – 2 slices
- garlic cloves – 4, minced
- olive oil – 4 tablespoons
- paprika – 1 teaspoon
- white wine vinegar – 2 tablespoons
- fresh parsley – for garnish
Instructions
- Place the whole chicken in a large pot with water and salt. Bring to a boil, then simmer for about 1.5 hours until the chicken is cooked through and tender.
- Remove the chicken, reserving the broth, and let cool. Shred the chicken meat into pieces, discarding skin and bones.
- In a food processor, blend the walnuts until finely ground. Add stale bread and mix until smooth.
- Gradually add 2 cups of the reserved broth and continue blending until you achieve a thick, creamy consistency.
- Stir in minced garlic, olive oil, paprika, and white wine vinegar. Mix well to combine.
- Combine the shredded chicken with the walnut sauce, blending thoroughly.
- Transfer to a serving platter, garnish with fresh parsley, and serve either cold or at room temperature.
