‘Ente in Bier’, or ‘Duck in Beer’, is a classic German meat dish that is known for its rich, hearty flavors and rustic appeal. Originating in the countryside of Bavaria, this dish combines the robust flavors of duck with the deep, complex notes of a traditional German beer. It’s a perfect reflection of Germany’s culinary heritage, where simple ingredients are transformed into a comforting, gourmet experience. Traditionally served during festive occasions, this dish pairs well with roasted vegetables and crusty bread, making it a favorite among families and gatherings.

Ingredients

  • duck – 1 whole / 2 kg
  • dark German beer – 2 cups / 480 ml
  • onion – 1 large / 200 g, chopped
  • carrots – 2 medium / 150 g, sliced
  • celery stalks – 2 / 120 g, sliced
  • garlic – 4 cloves, minced
  • thyme – 1 tsp
  • bay leaves – 2
  • salt – to taste
  • black pepper – to taste
  • olive oil – 2 tbsp / 30 ml

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Pat the duck dry and season generously with salt and black pepper inside out.
  3. In a large oven-proof pot, heat olive oil over medium heat. Brown the duck on all sides until golden brown. Remove and set aside.
  4. In the same pot, add onions, carrots, and celery. Sauté until the onion is translucent, about 5 minutes.
  5. Add garlic, thyme, and bay leaves. Cook for another minute.
  6. Pour in the beer and bring to a simmer, scraping any brown bits from the bottom of the pot.
  7. Return the duck to the pot, cover, and transfer to the oven. Roast for 1.5 to 2 hours, basting occasionally, until the duck is tender and cooked through.
  8. Remove the duck from the pot, carve, and serve with the vegetables and sauce.

Substitutions

  • dark German beer -> any stout or porter
  • olive oil -> butter

Enhancements in the Next Evolution

  • Add a marinade of beer, garlic, and herbs for the duck a day before cooking for enhanced flavor.
  • Introduce chopped apples to the pot for a touch of sweetness.
  • Finish with a sprinkling of fresh parsley for a fresh aroma.
