Ingredients
- Eels – 500 g / 1.1 lbs

- Black pepper – 1/2 tsp / 2.5 g

- Fresh parsley – 2 tbsp, chopped
- Olive oil – 1 cup / 240 ml
- All-purpose flour – 1 cup / 120 g
Instructions
- Clean the eels thoroughly and cut them into 5 cm (2 inch) pieces.
- In a bowl, mix lemon juice, salt, black pepper, minced garlic, and parsley. Add the eel pieces and marinate for at least 30 minutes.
- Heat the olive oil in a deep-frying pan over medium-high heat.
- Dredge the marinated eel pieces in all-purpose flour until fully coated.
- Fry the eels in the hot oil until golden brown and crispy, about 5-7 minutes per side.
- Remove the eels and drain on paper towels. Serve hot with a sprinkle of fresh parsley.
