The Empanada Catamarqueña is a traditional Argentine pastry that hails from the Catamarca region, renowned for its unique take on this beloved dish. Ingredients

  • all-purpose flour – 3 cups / 360 g
  • salt – 1 tsp / 5 g
  • butter – 1 cup / 227 g
  • ice-cold water – 3/4 cup / 180 ml
  • ground beef – 1 lb / 450 g
  • onion – 1 medium / 150 g, finely chopped
  • hard-boiled eggs – 2, chopped
  • green olives – 1/2 cup / 75 g, sliced
  • paprika – 1 tsp / 5 g
  • cumin – 1/2 tsp / 2.5 g
  • black pepper – 1/4 tsp / 1 g
  • vegetable oil – 2 tbsp / 30 ml

Instructions

  1. Combine flour and salt in a large bowl. Add butter and mix until the mixture resembles coarse crumbs.
  2. Add ice-cold water gradually, mixing until a dough forms. Wrap the dough in plastic and refrigerate for 30 minutes.
  3. In a skillet, heat oil over medium heat. Cook onions until soft, then add ground beef, stirring to break it up until browned.
  4. Stir in paprika, cumin, and black pepper. Cook for another 5 minutes.
  5. Remove from heat and stir in chopped hard-boiled eggs and sliced olives. Let the filling cool.
  6. Preheat your oven to 375°F (190°C). Roll out the dough to 1/8 inch thickness on a floured surface. Cut into circles using a 4-inch cutter.
  7. Place a spoonful of filling in each dough circle, fold over, and seal the edges by pinching or using a fork.
  8. Place empanadas on a baking sheet lined with parchment paper and bake for 25-30 minutes until golden brown.
