Efo-riro is a rich, flavorful spinach stew native to the Yoruba-speaking parts of Nigeria. It’s a vibrant dish that combines African spinach with aromatic spices, palm oil, and assorted meats or fish. Traditionally, Efo-riro is served with fufu, pounded yam, or rice. This dish is celebrated for its deep, layered flavors that come from the unique blend of indigenous spices and herbs that create a mouth-watering experience in every bite.

Ingredients

  • Palm oil – 1/2 cup / 120 ml
  • Onion – 1 large / 150 g, chopped
  • Red bell pepper – 1 large / 160 g, chopped
  • Habanero peppers – 2 small / 20 g
  • Tomatoes – 2 medium / 300 g, diced
  • Ground crayfish – 2 tbsp / 20 g
  • Goat meat – 300 g, cooked and sliced
  • Smoked fish – 200 g, deboned and shredded
  • Spinach – 500 g, chopped
  • Water – 1 cup / 240 ml
  • Seasoning cubes – 2 cubes
  • Salt – to taste

Instructions

  1. Heat the palm oil in a large pot over medium heat until hot.
  2. Add the chopped onions and sauté until translucent.
  3. Blend the red bell pepper and habanero peppers to a smooth paste.
  4. Add the pepper blend to the pot and cook for 10 minutes, stirring occasionally.
  5. Stir in the diced tomatoes and cook for an additional 5 minutes.
  6. Add the crayfish and stir well to combine.
  7. Add the cooked goat meat and smoked fish to the mixture and stir.
  8. Pour in the water and add the seasoning cubes. Allow it to simmer for 10 minutes.
  9. Finally, stir in the chopped spinach and reduce heat to low. Cook until the spinach is just wilted.
  10. Adjust the salt to taste and serve hot.

  • Crayfish -> Shrimp paste
  • Spinach -> Kale or collard greens
