Ingredients
- peanuts – 1 cup / 140 g
- water – 1 cup / 240 ml
- white onion – 1 small, diced
- garlic cloves – 2, minced
- vegetable oil – 2 tbsp / 30 ml
- achiote (annatto) powder – 1/2 tsp
- milk – 1/2 cup / 120 ml
- salt – to taste
- cumin – 1/4 tsp
Instructions
- In a skillet over medium heat, add the vegetable oil. Once hot, add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the achiote powder and cumin to the skillet. Stir well to combine with the onions and garlic, cooking for another minute.
- In a blender, combine the peanuts and water. Blend until smooth.
- Pour the peanut mixture into the skillet with the onion mixture, stirring well.
- Slowly stir in the milk, allowing the sauce to thicken. Simmer for about 5-10 minutes until desired consistency is reached.
- Season with salt to taste before serving.
