Dum aloo – Classic

Dum Aloo is a quintessentially Indian vegetarian dish that showcases the lush flavors of northern India. Hailing from the region of Kashmir, it is a staple that has traveled through various Indian states, evolving and adapting local spices and culinary techniques. Traditionally, baby potatoes are simmered slowly in a rich, aromatic sauce, allowing the flavors to seep deep into the vegetable. Each bite is a harmonious blend of spices, yogurt, and the naturally earthy taste of potatoes, creating a soul-warming dish perfect for any gathering.

Ingredients

  • baby potatoes – 500 g / 1 lb
  • vegetable oil – 2 tbsp
  • plain yogurt – 1 cup / 245 g
  • cumin seeds – 1 tsp
  • coriander powder – 1 tbsp
  • turmeric powder – 1/2 tsp
  • red chili powder – 1 tsp
  • fennel powder – 1 tsp
  • garam masala – 1 tsp
  • salt – to taste
  • ginger paste – 1 tsp
  • garlic paste – 1 tsp
  • onion – 1 large, finely chopped
  • tomato puree – 1/2 cup / 120 g
  • fresh cilantro – for garnish

Instructions

  1. Boil the potatoes until tender. Peel and set aside.
  2. Heat oil in a pan. Fry boiled potatoes until golden brown. Remove and set aside.
  3. In the same pan, add cumin seeds. Sauté until they splutter.
  4. Add onions, ginger, and garlic paste. Cook until the onions turn golden.
  5. Mix in tomato puree, coriander powder, turmeric, chili powder, and fennel powder. Cook for 5 minutes.
  6. Add yogurt and salt, stirring continuously to avoid curdling.
  7. Return the potatoes to the pan. Coat with the spice mixture.
  8. Cover and cook on low heat for 15 minutes until potatoes absorb the flavors.
  9. Sprinkle garam masala and garnish with cilantro. Serve hot.

Substitutions

  • baby potatoes -> regular potatoes cut into pieces
  • plain yogurt -> coconut cream
  • vegetable oil -> ghee
