Ingredients

- light soy sauce – 3 tbsp
- spring onions – 2, sliced
- white pepper – 1 tsp
- sesame oil – 2 tsp
- garlic – 2 cloves, minced
Instructions
- 1. Rinse the duck blood and cut it into bite-sized cubes.
- 2. Soak the rice vermicelli in warm water for 15 minutes until soft. Drain and set aside.
- 3. In a pot, bring the chicken stock to a boil. Add ginger slices and let it simmer for 5 minutes to infuse flavor.
- 4. Add the duck blood cubes into the pot and simmer for 10 minutes until cooked through.
- 5. Stir in the soy sauce, garlic, and white pepper. Add the soaked rice vermicelli and cook for another 3 minutes.
