Ingredients
- zucchini – 4 medium
- ground pork – 400 g / 14 oz
- onion, chopped – 1 large
- garlic cloves, minced – 2
- uncooked rice – 100 g / 1/2 cup
- tomato paste – 2 tablespoons
- diced tomatoes – 400 g / 14 oz can
- dill, chopped – 2 tablespoons
- parsley, chopped – 2 tablespoons
- salt – 1 teaspoon
- pepper – 1/2 teaspoon
- olive oil – 2 tablespoons
- water – 250 ml / 1 cup
Instructions
- Preheat the oven to 180°C (350°F).
- Cut the zucchini in half lengthwise and scoop out the seeds to create hollow centers.
- In a pan, heat olive oil over medium heat. Add onion and garlic; sauté until translucent.
- Add ground pork to the pan, cooking until browned. Stir in rice, tomato paste, salt, and pepper.
- Mix in chopped dill and parsley; remove from heat.
- Fill zucchini halves with the pork and rice mixture.
- Place stuffed zucchini in a baking dish. Pour diced tomatoes over them, adding water to the dish.
- Cover with foil and bake for 45-50 minutes, until zucchini is tender and filling is cooked.
- Serve hot, garnished with additional parsley if desired.
