Domoda is a beloved dish from Gambia, featuring a rich and creamy peanut-based sauce, typically enveloping tender cuts of meat such as beef or chicken. Ingredients

  • beef, cubed – 1 lb / 450 g
  • peanut butter, preferably natural – 1 cup / 240 g
  • tomatoes, diced – 2 large
  • onion, chopped – 1 large
  • bell pepper, diced – 1 medium
  • garlic, minced – 3 cloves
  • ginger, grated – 1 inch piece
  • vegetable oil – 2 tbsp
  • tomato paste – 2 tbsp
  • chicken or beef stock – 3 cups / 720 ml
  • kale or spinach – 2 cups / 100 g
  • salt – to taste
  • black pepper – to taste
  • white rice – to serve

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger, cooking until the onions are translucent.
  3. Add the beef and brown on all sides.
  4. Mix in the bell pepper, tomatoes, and tomato paste. Cook for about 5 minutes until the vegetables soften.
  5. Stir in the peanut butter until well combined.
  6. Slowly add in the stock while stirring to create a smooth sauce.
  7. Simmer on low heat for 30-40 minutes until the beef is tender, stirring occasionally.
  8. Mix in the greens and cook for an additional 5 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot over a bed of white rice.
