Domoda is a beloved dish from Gambia, featuring a rich and creamy peanut-based sauce, typically enveloping tender cuts of meat such as beef or chicken. Ingredients
- beef, cubed – 1 lb / 450 g
- peanut butter, preferably natural – 1 cup / 240 g
- tomatoes, diced – 2 large
- onion, chopped – 1 large
- bell pepper, diced – 1 medium
- garlic, minced – 3 cloves
- ginger, grated – 1 inch piece
- vegetable oil – 2 tbsp
- tomato paste – 2 tbsp
- chicken or beef stock – 3 cups / 720 ml
- kale or spinach – 2 cups / 100 g
- salt – to taste
- black pepper – to taste
- white rice – to serve
Instructions
- Heat oil in a large pot over medium heat.
- Add the onions, garlic, and ginger, cooking until the onions are translucent.
- Add the beef and brown on all sides.
- Mix in the bell pepper, tomatoes, and tomato paste. Cook for about 5 minutes until the vegetables soften.
- Stir in the peanut butter until well combined.
- Slowly add in the stock while stirring to create a smooth sauce.
- Simmer on low heat for 30-40 minutes until the beef is tender, stirring occasionally.
- Mix in the greens and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot over a bed of white rice.
