Dolma, a dish deeply rooted in Turkish culinary tradition, is a classic example of the country’s love for flavors and shared meals. The term ‘Dolma’ means ‘stuffed’ in Turkish, and it generally refers to vegetables like peppers, zucchini, or grape leaves filled with an aromatic mixture of rice, herbs, and spices. This dish captures the essence of Ottoman cuisine, highlighting the use of simple, fresh ingredients transformed into something truly special through careful preparation.

Ingredients

  • grape leaves – 20 leaves
  • rice – 1 cup / 190 g
  • onion – 1 large, finely chopped
  • pine nuts – 2 tbsp / 28 g
  • currants – 2 tbsp / 20 g
  • olive oil – 1/2 cup / 120 ml
  • dill – 2 tbsp, chopped
  • mint – 1 tbsp, chopped
  • lemon – 1, juice and zest
  • salt – 1 tsp
  • black pepper – 1/2 tsp

Instructions

  1. Rinse the grape leaves in warm water to remove excess salt.
  2. In a pan, heat 2 tbsp of olive oil. Add onions and sauté until translucent.
  3. Stir in pine nuts, currants, and rice. Cook for 2 more minutes.
  4. Add 1 cup of water and season with salt and pepper. Cover and cook until the rice is just tender.
  5. Remove from heat. Stir in dill, mint, lemon zest, and juice. Let the mixture cool.
  6. Place a grape leaf on a flat surface, shiny side down. Place 1 tbsp of rice mixture at the base of the leaf, fold in the sides, and roll tightly.
  7. Layer the rolls in a pot, seam side down. Pour remaining olive oil and enough water to barely cover rolls.
  8. Slap on a plate to weigh them down, cover, and simmer for 40 minutes.

  • olive oil -> sunflower oil
  • currants -> raisins
