Diri ak Djon Djon, often referred to as ‘black rice,’ is a quintessential dish from Haiti, steeped in cultural significance and celebrated for its unique flavor profile. The dish is primarily composed of rice cooked in djon djon—dried black mushrooms indigenous to Haiti that impart a distinct aroma and an earthy, umami depth to the rice. Traditionally served during special occasions, this dish symbolizes the rich heritage and the vibrant culinary tapestry of Haitian cuisine.

Ingredients

  • Djon djon mushrooms – 1 cup / 80 g
  • Water – 4 cups / 960 ml
  • Long grain rice – 2 cups / 400 g
  • Vegetable oil – 2 tablespoons / 30 ml
  • Onion (chopped) – 1 large / 150 g
  • Scotch bonnet pepper – 1, whole
  • Garlic (minced) – 4 cloves
  • Thyme (fresh) – 2 sprigs
  • Salt – 1 teaspoon / 5 g
  • Black pepper – 1 teaspoon / 5 g
  • Green peas – 1 cup / 150 g
  • Butter – 2 tablespoons / 28 g

Instructions

  1. Rinse the djon djon mushrooms in cold water to remove any debris.
  2. In a saucepan, boil the water and add the djon djon mushrooms. Allow them to steep until the water turns black (about 10 minutes). Strain the black liquid and discard the mushrooms.
  3. In a large pot, heat the oil over medium heat. Sauté the chopped onion until translucent.
  4. Add the whole scotch bonnet pepper, minced garlic, and thyme. Cook for another minute.
  5. Pour in the black mushroom liquid and bring it to a boil. Stir in rice, salt, and black pepper.
  6. Reduce the heat to low, cover, and simmer for 20 minutes.
  7. Stir in the green peas and butter, then cover and cook for an additional 5 minutes or until rice is tender.
  8. Remove the thyme sprigs and scotch bonnet pepper before serving.

  • Djon djon mushrooms -> Porcini mushrooms with black bean sauce for color
