Ingredients

  • pork shoulder – 1.5 lbs / 680 g
  • vinegar – 1 cup / 240 ml
  • pork blood – 1 cup / 240 ml
  • garlic – 6 cloves, minced
  • onion – 1 large, chopped
  • ginger – 1 inch piece, sliced
  • bay leaves – 2
  • chilies – 2-3, sliced
  • fish sauce – 2 tablespoons / 30 ml
  • water – 2 cups / 480 ml
  • oil – 2 tablespoons / 30 ml
  • salt and pepper – to taste

Instructions

  1. Heat oil in a pot over medium heat. Add garlic, onion, and ginger, sautéing until golden and fragrant.
  2. Add the pork shoulder and cook until all sides are browned.
  3. Pour in the vinegar and allow to simmer. Do not stir until the strong vinegar smell dissipates.
  4. Add water, bay leaves, chilies, and fish sauce. Bring to a boil, then reduce heat to simmer.
  5. Once pork is tender, slowly stir in the pork blood, stirring continuously to avoid curdling.
  6. Cook until the stew thickens, adjusting seasoning with salt and pepper.
  7. Serve hot with steamed rice.

  • chilies -> bell pepper for less heat
