This dish is a type of roti, a soft flatbread filled with seasoned split peas, that reflects the rich Indo-Caribbean culture influenced by Indian laborers who arrived in the 19th century. Dhalpuri roti is cherished not just for its delicious, mildly spiced filling but also for the way it serves as an ideal accompaniment to various curries and stews, delivering a hearty and comforting meal.

Ingredients

  • All-purpose flour – 4 cups / 480 g
  • Salt – 1 tsp
  • Baking powder – 1 tsp
  • Water – 1 ½ cups / 360 ml
  • Oil – 2 tbsp
  • Split peas – 1 cup / 200 g
  • Turmeric – ½ tsp
  • Cumin seeds – 1 tsp
  • Garlic cloves – 2, minced
  • Green chili – 1, finely chopped

Instructions

  1. Rinse split peas and soak them in water for 2 hours. Drain and set aside.
  2. In a medium pot, combine split peas with turmeric and enough water to cover them. Cook until tender but not mushy, about 20 minutes.
  3. Drain and transfer to a food processor. Add cumin seeds, garlic, and green chili, then pulse until the mixture is coarse but not a paste.
  4. In a large mixing bowl, combine flour, salt, and baking powder. Gradually add water, kneading until a soft dough forms. Add more water if necessary.
  5. Divide the dough into equal parts, depending on preferred roti size. Roll each piece into a ball, then let rest for 30 minutes covered.
  6. Flatten each dough ball, spoon a portion of the split pea filling into the center, and pinch edges to seal.
  7. Gently roll the filled dough into a flat, round shape using a rolling pin.
  8. Heat a tawa or griddle over medium heat. Cook each roti, brushing lightly with oil, until both sides are golden brown and cooked through.
