Daraba is a traditional stew hailing from the heart of Chad, a land rich in cultural diversity and culinary heritage. Ingredients
- okra – 250 g / 1 cup chopped
- spinach – 200 g / 1 bunch, chopped
- eggplant – 150 g / 1 cup, diced
- tomatoes – 200 g / 1 cup, diced
- onion – 1 large, chopped
- peanut butter – 120 g / 1/2 cup
- water – 500 ml / 2 cups
- vegetable oil – 30 ml / 2 tablespoons
- salt – 1 teaspoon
- red pepper flakes – 1/2 teaspoon
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.
- Add the tomatoes and cook until they start to break down, about 5 minutes.
- Stir in the eggplant and cook for another 5 minutes, until it starts to soften.
- Add the okra, spinach, and water. Stir to combine.
- In a small bowl, mix the peanut butter with a bit of hot water to thin it out, then add to the pot and mix well.
- Season with salt and red pepper flakes. Stir to combine thoroughly.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes, stirring occasionally, until all the vegetables are tender.
