Dal, a staple in Indian cuisine, is a comforting stew featuring lentils simmered in fragrant spices. Its name derives from Sanskrit, meaning ‘to split,’ and reflects its origins rooted in ancient Indian cooking traditions. Ingredients

  • Yellow split lentils (moong dal) – 1 cup / 200 g
  • Water – 3 cups / 720 ml
  • Turmeric powder – 1/2 teaspoon
  • Salt – 1 teaspoon
  • Vegetable oil – 2 tablespoons
  • Cumin seeds – 1 teaspoon
  • Onion, finely chopped – 1 medium / 150 g
  • Tomatoes, finely chopped – 2 medium / 200 g
  • Garlic cloves, minced – 2 cloves
  • Ginger, minced – 1 inch piece
  • Green chilies, slit – 2
  • Coriander powder – 1 teaspoon
  • Garam masala – 1/2 teaspoon
  • Fresh coriander leaves, chopped – Handful
  • Lemon – 1

Instructions

  1. Rinse the lentils thoroughly under cold water until the water runs clear.
  2. In a large pot, combine lentils, water, turmeric powder, and salt. Bring to a boil and then simmer on low heat for 20-25 minutes until the lentils are tender but not mushy.
  3. Heat oil in a separate pan over medium heat. Add cumin seeds and let them splutter.
  4. Add the onions and sauté until golden brown.
  5. Stir in tomatoes, garlic, ginger, and green chilies. Cook until tomatoes are soft and the oil begins to separate.
  6. Add coriander powder and garam masala, stir well, and cook for another 2-3 minutes.
  7. Add the cooked lentils to the onion-tomato mixture. Simmer for 5 minutes, adjusting salt to taste.
  8. Garnish with fresh coriander leaves and a squeeze of lemon juice before serving.

  • Yellow split lentils (moong dal) -> Red lentils (masoor dal)
  • Vegetable oil -> Ghee or coconut oil
  • Garam masala -> Curry powder
