Daktyla, a traditional Greek bread, finds its roots steeped in the rich tapestry of Hellenic cuisine. This unique bread, whose name translates to ‘fingers’ due to its distinctive shape, is celebrated for its golden crust and tender crumb. Its origins lie in the rural villages of Greece where it was baked in communal wood-fired ovens, shared among families during festive gatherings. The bread is characterized by its aromatic mix of sesame seeds and anise, which imbibe it with a flavor profile that captures the essence of Greece itself.

Ingredients

  • All-purpose flour – 4 cups / 480 g
  • Whole wheat flour – 1 cup / 120 g
  • Warm water – 1 1/2 cups / 360 ml
  • Dry yeast – 2 1/4 teaspoons / 7 g
  • Olive oil – 1/4 cup / 60 ml
  • Honey – 2 tablespoons / 30 g
  • Salt – 2 teaspoons / 10 g
  • Sesame seeds – 1/4 cup / 35 g

Instructions

  1. In a large bowl, mix the warm water, yeast, and honey. Let it sit for 5-10 minutes until the mixture foams.
  2. Add the olive oil, salt, whole wheat flour, and half of the all-purpose flour. Stir to combine.
  3. Gradually add the remaining all-purpose flour and knead the dough until smooth and elastic, about 10 minutes.
  4. Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.
  5. Punch down the dough and divide it into 4 equal parts. Roll each part into a log about 12 inches long.
  6. Place the logs on a baking sheet lined with parchment paper, brush with water, and sprinkle sesame seeds over the top.
  7. Cover them with a cloth and allow them to rise again for 30 minutes.
  8. Preheat the oven to 375°F (190°C). Bake for 25-30 minutes until golden brown.
  9. Allow to cool before serving.
