- curry powder – 2 tbsp / 18 g
- onion – 1 large / 150 g diced
- garlic cloves – 4 minced
- ginger – 1 tbsp / 15 g minced
- vegetable broth – 4 cups / 960 ml
- olive oil – 2 tbsp / 30 ml
- salt – to taste
- pepper – to taste
- cilantro – for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent.
- Stir in minced garlic and ginger, cook for an additional minute until fragrant.
- Add curry powder and mix well to coat the onions, cooking for a further two minutes.
- Incorporate diced butternut squash, coconut milk, and vegetable broth, and bring to a boil.
- Reduce heat to a simmer and cook until the squash is tender, about 20 minutes.
- Remove from heat, blend the soup until smooth using an immersion blender.
- Stir in lime juice, and season with salt and pepper to taste.
- Ladle into bowls, garnish with fresh cilantro before serving.
