Culurgionis d’Ogliastra is a traditional Sardinian dumpling hailing from the pastoral landscapes of the Ogliastra region in Italy. These exquisite parcels are reminiscent of ravioli but stand out due to their unique braided closure, called ‘sa spighitta’. Traditionally, they are filled with potatoes, pecorino cheese, and mint, bringing together a harmonious blend of earthiness and aromatic freshness that exemplifies Sardinian culinary heritage.

Ingredients

  • Semolina flour – 2 cups / 320 g
  • All-purpose flour – 1 cup / 120 g
  • Warm water – 3/4 cup / 180 ml
  • Salt – 1 tsp / 6 g
  • Potatoes – 1 lb / 450 g, peeled and cubed
  • Pecorino cheese – 1 cup / 100 g, grated
  • Fresh mint – 2 tbsp / 5 g, chopped
  • Garlic – 1 clove, minced
  • Butter – 3 tbsp / 42 g
  • Olive oil – 2 tbsp / 30 ml
  • Black pepper – to taste

Instructions

  1. Combine semolina and all-purpose flour in a bowl with salt.
  2. Gradually add the warm water, mixing until a dough forms.
  3. Knead the dough for about 10 minutes until smooth. Let it rest covered for 1 hour.
  4. Boil the potatoes until tender, drain and mash them.
  5. Mix mashed potatoes with pecorino, mint, garlic, salt, and pepper.
  6. Roll out the dough into thin sheets and cut into circles.
  7. Place a spoonful of filling onto each circle and fold, pinching to seal with a braided edge.
  8. Boil a pot of salted water and cook culurgionis until they float.
  9. Melt the butter and olive oil together, drizzle over the cooked dumplings.
