Ingredients

  • Sun-dried tomatoes in oil – 200 g / 7 oz
  • Fresh basil leaves – 30 g / 1 oz
  • Garlic cloves – 2, medium
  • Parmesan cheese, grated – 50 g / 1.75 oz
  • Extra virgin olive oil – 100 ml / 3.4 fl oz
  • Pine nuts – 25 g / 0.9 oz
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. Drain the sun-dried tomatoes, reserving the oil.
  2. In a food processor, combine the sun-dried tomatoes, basil leaves, garlic cloves, and pine nuts. Pulse until coarsely chopped.
  3. Add the Parmesan cheese and some of the reserved oil, continuing to pulse until a paste forms.
  4. Gradually stream in the olive oil while pulsing until the mixture reaches a smooth, spreadable consistency.
  5. Season with salt and black pepper to taste, and adjust seasoning as needed.
  6. Transfer the Culadur to a serving dish or jar, and allow it to sit at room temperature for at least 30 minutes before serving to enhance the flavors.

  • Parmesan cheese -> Pecorino Romano
  • Sun-dried tomatoes -> Semi-dried tomatoes
